Ingredients
- 1 cup pasta (lentil, quinoa, brown rice, or chickpea)
- 2 tbsp olive oil
- ½ yellow onion (diced)
- ½ cup shiitake mushrooms (sliced)
- 3–4 asparagus stalks
- ½ cup baby spinach
- 2–3 garlic cloves (minced)
- Juice of ½ lemon
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- While the pasta cooks, heat olive oil in a pan and sauté the diced onion until soft.
- Add asparagus with a splash of water and cook until slightly tender.
- Add mushrooms, spinach, and garlic, cooking until everything softens.
- Reserve about 2 tablespoons of pasta water, then drain the pasta.
- Add the pasta to the pan, along with the reserved water and lemon juice.
- Season with salt and pepper, toss gently, and serve warm.
