Mushroom & Asparagus Pasta

A comforting bowl of mushroom and asparagus pasta that feels indulgent but remains clean and wholesome. It’s packed with vegetables, flavor, and nourishing ingredients.

Ingredients

  • 1 cup pasta (lentil, quinoa, brown rice, or chickpea)
  • 2 tbsp olive oil
  • ½ yellow onion (diced)
  • ½ cup shiitake mushrooms (sliced)
  • 3–4 asparagus stalks
  • ½ cup baby spinach
  • 2–3 garlic cloves (minced)
  • Juice of ½ lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. While the pasta cooks, heat olive oil in a pan and sauté the diced onion until soft.
  3. Add asparagus with a splash of water and cook until slightly tender.
  4. Add mushrooms, spinach, and garlic, cooking until everything softens.
  5. Reserve about 2 tablespoons of pasta water, then drain the pasta.
  6. Add the pasta to the pan, along with the reserved water and lemon juice.
  7. Season with salt and pepper, toss gently, and serve warm.
