Chickpea or Chicken Salad

A versatile and protein-rich salad that you can customize based on your preference plant-based or with chicken. It’s fresh, crunchy, and perfectly balanced.

Ingredients

  • ½ avocado
  • 2 handfuls mixed greens
  • ¼ cup chopped celery
  • ¼ cup diced cucumber
  • ¼ cup walnuts
  • 1 cup chickpeas or ½ cup chicken breast

Dressing

  • Juice of ½ lemon
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • Sea salt & pepper
  • Optional: 1 tbsp tahini for a creamier texture

Instructions

  1. Add all salad ingredients into a large bowl.
  2. Mix the dressing ingredients separately.
  3. Pour dressing over the salad and toss well before serving.
