Ingredients
- ½ cup cooked quinoa
- ½ cup avocado (sliced)
- ¼ cup roasted sweet potato
- ¼ cup chopped red onion
- ¼ cup chopped artichokes
Dressing
- 1 tbsp tahini
- Juice of ½ lemon
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- Add all ingredients into a bowl.
- Mix the dressing separately.
- Pour dressing over the bowl and toss gently.
- Serve fresh.
