Quinoa Bowl

A wholesome and comforting dinner bowl that is both nourishing and satisfying. This quinoa bowl is loaded with fiber, healthy fats, and vibrant flavors.

Ingredients

  • ½ cup cooked quinoa
  • ½ cup avocado (sliced)
  • ¼ cup roasted sweet potato
  • ¼ cup chopped red onion
  • ¼ cup chopped artichokes

Dressing

  • 1 tbsp tahini
  • Juice of ½ lemon
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Add all ingredients into a bowl.
  2. Mix the dressing separately.
  3. Pour dressing over the bowl and toss gently.
  4. Serve fresh.
